Shellfish in Brandy Cream
Ingredients
225g (8oz) cooked peeled prawns, fresh or defrosted
115g (4oz) scallop meat, fresh or defrosted, sliced
1 x 15ml spoon (1 tablespoon) brandy
55g (2oz) button mushrooms, sliced
2 x 15ml spoon (2 tablespoons) double cream
salt and black pepper
chopped chives, to garnish

Method
Microwave Power: 800 Watt
Place the scallops in a microwave proof dish, spoon over the brandy. Cover and cook on HIGH for 2minutes to 2 minutes 30 seconds, stirring once during cooking.
Stir in the mushrooms and prawns and cook for a further 2 minutes on HIGH.
Stir in the cream and cook on HIGH for 30 seconds – 1 minute or until piping hot.
Season to taste and sprinkle with chives before serving as a starter with soft brown rolls.
